Okay, I’m kind of excited about this one. It’s not like me to just get home and decide to make something. I need to prepare. I need to obsess and then I need to shop. But I got an idea today to make someone in my office a bread of some kind and I had the ingredients (or most of them, anyway) sitting around so, voila, I made a banana bread from scratch tonight (thanks in part to my Betty Crocker Big Red Cookbook).

It’s actually my test banana bread. I’m good with making something for myself without testing it but if I’m going to give it as a gift (and that’s the plan) I needed to make sure I could do it.  And I’m pretty damn pleased to say I CAN and DID do it.

I had to improvise because I didn’t have buttermilk (used yogurt diluted with milk) and I didn’t use nuts on this one (but will on the one I give away) and even with those two changes, the banana bread really did come out good. I’m kind of tickled about this one.

Recipe is online here and it’s probably just a basic recipe anyone else could have told me how to make but I have the cookbook and figured an easy recipe was just as good to use as anything else.

I’ve had two pieces tonight. If no one else enjoys it at least I will!
